Ethiopia's Banko Taratu coffee is renowned for its exceptional quality, attributed to meticulous cultivation and processing methods. Sourced from over 300 family-owned farms in the Gedeb district of the Yirgacheffe region, this coffee is cultivated at elevations ranging from 1,950 to 2,300 meters above sea level. The high altitude contributes to the development of complex flavors and vibrant acidity.The double fermentation washed process employed in producing Banko Taratu coffee enhances its flavor profile. Initially, ripe coffee cherries undergo pulping to remove the outer skin. The beans, still coated with mucilage, are then placed in fermentation tanks for an initial period of 48 to 72 hours. After washing, the beans undergo a second fermentation for an additional 12 to 24 hours, allowing for the development of rich, layered flavors. Post-fermentation, the beans are dried on raised beds for 12 to 15 days to achieve the desired moisture content.
