The town of La Yerba is a small community on the northern side of the San Juan Volcano. The community was originally founded as El Astal, but relocated in 1969 to border a highway as a newly formed communally owned agricultural land system, taking the name La Yerba. Today, the town is made up of 35 joint land-holding farmers and has a population of 786 people. La Yerba is home to the ASTAL society, which has partnered with San Cristobal for eight years, and its economy centers on coffee and avocado production, providing farmers with limited periods of guaranteed income. Through collaboration with San Cristobal and CAFESUMEX, farmers receive additional price adjustments based on coffee quality several months after harvest. Lacking a wet mill, ASTAL processes its coffees naturally. Instead of removing the pulp and mucilage from the coffee cherries, the coffee is only rinsed off then immediately set out to dry while still in cherry form. This process is very similar to drying a grape into a raisin. By allowing the coffee to dry as whole cherries, many flavors and characteristics are imparted onto the coffee bean. Naturally processed coffees are known to have a heavier mouth feel, lower acidity and distinct fruity characteristics.
