This decaf comes from the Co-op Asociación Unión de Cafetaleros Ecológicos. They are a forward-thinking cooperative in San Ignacio, Cajamarca in Peru that focuses on education and agricultural research, and also make a point to highlight and support female-owned farms through dedicated lot separations.
The Swiss Water Process is a chemical-free method of decaffeinating coffee that uses only water, temperature, and time. Green coffee beans are soaked to dissolve caffeine, then passed through a carbon filter that traps the caffeine while preserving the coffee’s flavor compounds. This gentle process maintains the coffee’s unique origin characteristics without the use of solvents.
