Processing Details
Max Aníbal Vásquez follows Catracha Coffee's recommended processing practices to ensure high-quality coffee. Ripe cherries are carefully harvested and sorted before being processed using a micro-mill. The cherries are de-pulped, fermented in tanks for approximately 24 hours, washed thoroughly, and dried on raised beds for about 15 days. These careful post-harvest steps preserve the coffee's quality and distinct flavor profile, enabling Max to produce exceptional specialty coffee
