This coffee is produced by Alessandro Alves Hervaz on his family-owned farm, Fazenda Fortaleza, located in Mantiqueira de Minas, Brazil. Alessandro was introduced to coffee in 1993 when his father purchased the farm, and since then, the family has operated under a smallholder, family-run model. They focus on producing high-quality natural and pulped cherry coffees using slow-drying methods on paved patios, suspended terraces, and in greenhouses.
In 2016, Alessandro began implementing selective harvesting—an uncommon and initially controversial technique in Brazil at the time. The results, however, spoke for themselves: the cup quality dramatically improved, earning Alessandro and his farm multiple awards at national and regional coffee competitions. That same year, he began experimenting with organic cultivation, receiving full certification from IBD in 2019.
A passionate innovator, Alessandro has fine-tuned his post-harvest processing through years of cupping and experimentation. His drying technique involves thick layers of cherries to encourage mild fermentation, leading to enhanced sweetness and body in the cup. His best coffees can take up to 40 days to dry.
The farm is also home to a successful beekeeping operation, which inspired the Honey & Coffee brand—a reflection of the farm’s dual focus and its commitment to sustainable, diversified agriculture.
