The process begins with a 24-hour oxidation period, during which the whole coffee cherries are left to rest. The cherries are then depulped and placed in a bioreactor, where a selected microbial culture is introduced for 20 hours of fermentation under carefully controlled conditions. Once fermentation is complete, the beans are thoroughly washed to preserve a clean, consistent sensory profile. The coffee is then dried in the sun over a carefully monitored 25-day period, helping retain its delicate characteristics. The resulting cup offers a distinctive profile of watermelon, honeysuckle, and cashew butter.
