Aquiares Estate, meaning “land between rivers” in the Huetar language, is Costa Rica’s largest coffee farm and home to about 1,800 people, often described as “Aquiares Coffee and Community.” Founded in 1890, the farm was transformed a century later by Alfonso Robelo, who fled civil war in Nicaragua in the 1980s and rebuilt Aquiares on the slopes of the Turrialba volcano with a visionary, people-centered approach. He redefined labor relations by enabling workers to purchase their own homes, fostering stability, pride, and long-term sustainability. Today, Aquiares is led by Alfonso’s son Diego, who has advanced the farm’s role as a leader in specialty coffee through innovative farming, new varieties, and experimental processing. The farm is also deeply committed to environmental stewardship, pursuing carbon neutrality, protecting biological corridors, and hosting global research on agroforestry and biodiversity. Aquiares serves as a model for equitable, sustainable coffee production, with Ally Coffee-selected lots reflecting shared values of innovation and responsibility. A standout example is the Centroamericano H1 hybrid, a high-yielding, rust-resistant variety well suited to Turrialba’s climate and processed using anaerobic natural fermentation to highlight its complex, elegant flavor profile.
