This coffee was produced by smallholder farmers in the Hambela district of Ethiopia’s Guji Zone. Coffee is commonly cultivated on small family farms, often alongside other crops and under the shade of native vegetation. The region’s high elevations, fertile soils, and favorable climate support slow cherry maturation, contributing to the complexity and distinctive character for which Guji coffees are known.
During harvest, ripe coffee cherries are handpicked and delivered to the Guyo wet mill for processing. The coffee is produced through a network of smallholder farms, with Guyo serving as the processing point for the cherries contributed by local producers. Grade 1 is Ethiopia’s highest coffee grade and reflects careful preparation, low defect levels, and strict quality standards. This lot highlights the fruit-forward sweetness, floral character, and vibrant complexity commonly associated with coffees from the Guji region.

PROCESSING DESCRIPTION
This lot underwent Natural processing at the Guyo wet mill. Ripe coffee cherries are delivered by smallholder producers and carefully selected before being dried with the fruit intact. The cherries are placed on raised drying beds, where they are monitored and turned regularly to promote even drying and preserve quality.
Throughout the drying process, the coffee beans remain enclosed within the fruit, allowing the sugars and fruit characteristics of the cherry to influence the development of the coffee. Once the cherries have reached the appropriate moisture level, they are rested before dry milling, when the dried fruit and parchment are removed in preparation for export.
