This natural processed coffee comes from the Sidama region of Ethiopia and is produced by Gashu Tafese, a longtime coffee producer who operates both washing stations and dry processing facilities in Chire and Hatesa. Gashu collects ripe red cherries from smallholder farmers, which are carefully presorted, dried on raised African beds, and further sorted after moisture levels are stabilized before being stored as jemfel (dried natural coffee). The coffee is processed at Gashu’s dry mill in Hatesa, where the region’s iconic natural processing helps highlight Sidama’s signature floral, bright, and fruit-forward characteristics. Grown in clay-rich soils at elevations of 2,000–2,150 meters above sea level, these high-altitude conditions contribute to a clean and vibrant cup profile. This lot comes to us through our longtime partners at Primavera Green Coffee, who have worked closely with Gashu for several years.
