Beti and Mahder sourced cherries from the higher-altitude hills of Idido and processed them with Aron at Dumerso, creating a coffee representative of the broader Yirgacheffe region.\u003cbr\u003e\u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv\u003eProcessing Method: Spontaneous Ferment\u003cbr\u003e\u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv\u003eInspired by open-air fermentation in lambic-style beers, spontaneous fermentation uses naturally occurring yeasts and bacteria to break down mucilage and enhance the coffee’s inherent qualities. This water-efficient method produces exceptional washed coffee without the approximately 40,000 liters typically required for a full fermentation cycle.\u003cbr\u003e\u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv\u003eRipe cherries are carefully hand-sorted, floated by density, and sorted again to ensure consistency. After pulping, the parchment is placed in small batches in dry fermentation tanks, allowing wild microorganisms to break down the mucilage.
